Amante has the soul of a creative Renaissance man with a passion for art that goes back in his family for generations, including a mother who was an influential Hollywood art director and a grandmother who was a color corrector.

Ashley and Hailee dig deep into Amante’s journey as a sushi chef and then a fashion photographer, and full circle back to KC as a chef and multiple restaurant owner.

His first restaurant, The Russell, is a casual dining spot centered around rustic, seasonal dishes cooked up on the restaurant’s Argentinian-style wood-fire grill. His second restaurant, Noka, is Japanese farmhouse-inspired and pays homage to Amante’s father. And his newest restaurant, Le Champion, opened recently in Westport, serving coffee and pastries by day and chef-curated bites, craft cocktails, and wine by evening.
